Sesame Savory Kebabs

Ingredients

  • 1tsp Smoked Paprika
  • 1tsp cumin
  • 1tsp ginger
  • 2 tbsp soy sauce
  • 1tbsp ketchup
  • 1 tsp cayenne
  • 1 tsp thyme
  • 1 tbsp sesame seeds
  • 1 lbs lean cubed beef

Directions

  • Combine all ingredients into a marinade and let the meat sit for at least two hours.
  • After marinating, feed them onto bamboo skewers, keeping about 1/2 in between each.
  • Add the vegetables on to separate skewers and place all on a cookie sheet into an oven set to 375°. Cook for 10 minutes and then set oven to broil for four.
  • Remove and serve with unused, extra marinade.

Is it just me? Or do y’all like meat? I can’t help it. I know a lot of people swear that vegan or vegetarian or pescatarian are where it’s at, but if you take me to a Korean BBQ or TexMex or Brazilian Steakhouse, I’m EAT’N-eat’n.

My mom knows it too. The thing is, when you have any more than three kids, meat get expensive in the United States (don’t argue with me, if you do you’re out of our tax bracket). So when it goes on sale, that’s when my mom broke out the good stuff.

*blows dust off cookbook* Let’s get cooking, you guys.

This recipe is straightforward, just like grilling. Except it is excellent to do if you don’t have a grill/live in an apartment. Utilize that oven people! I know broil scares some of you, but we want a crisp to the edges of our medium done meats. This is how you do it.

A trick my mom taught me was to soak your wooden skewers. That way they don’t burn on your grill (oven).

DON’T PUT YOUR MEAT OR VEGETABLES DIRECTLY ON THE METAL GRATES OF YOUR OVEN.

That’s a mess. Don’t make an extra mess. I wanna eat sooner, not later and have to worry about cleaning up a whole oven.

I used a small grate that goes onto your cookie sheet. It makes it better for even cooking all around. You might be able to balance the skewers along the edges of the cookie sheet so the meat will drip on it but also get more of an even cooking than if you just placed it directly on it.

The meat of this recipe is actually that marinade. Sesame is a little sweet to me and I love it, but this needs a kick. That’s where your spices come into play.

I’ll be real with you… The ancestors told me how much of each I needed to add of the spices. I kept forgetting to measure because it was “this much here” “this much there”. I promise you, they’re about all even measurements! So use this as a guide and change it how you will. But this will get you there.

Let it sit. Let it marinate. Let it chill. Those cubes don’t even wanna look at you until they get impaled.

The marinade didn’t go on my veggies to cook but I did make more sauce to dip them in. Do that! They taste great together! Crunchy veggies with soft meat? That’s the whole dinner!

My mom will attest: 1lb of meat is NOT enough. 1lb goes to 1 1/2-2 people max if you get four skewers each. Do with that information as you will.

Let me know how this goes and I may change the measurements (hopefully the ancestors won’t mind lol).
