
Lemon Roasted Broccoli
Ingredients
- 2 heads of broccoli
- 1/2 tbsp minced garlic
- 1 lemon
- 1 red bell pepper
- 1 tbsp red pepper seasoning
- 2 tbsp olive oil
Directions
- Heat oven to 375°F
- Prepare broccoli and bell pepper by washing. The broccoli needs to be divided into florets and bell pepper into slices.
- Cut your lemon in half and set aside one half for later. Divide the other into at least six thin slices.
- Place all of your broccoli into oven safe glass dish. Drizzle one tablespoon (or so) of olive oil over the florets and shake the red pepper seasoning on.
- Bake in the oven for 8 to 10 minutes. Take them out and mix in red bell pepper slices and your minced garlic.
- Place the lemon rounds on top and drizzle the remaining olive oil over everything before returning the dish to oven for additional 8 to 10 minutes.
- Remove from the oven and squeeze that remaining lemon half over contents before serving. Add salt and black pepper to taste.
Italian broccoli?
Well, sort of. In college, my Italian class had a thanksgiving potluck before we let out for the holiday. My family doesn’t celebrate thanksgiving, but I didn’t want to not bring anything and eat stuff. It makes me feel like a freeloader 😅 So, I made a side dish and leftover vanilla pizzelles that I helped my mom make the night before (a future recipe?? 👀). This is that side dish!
Something simple, very basic and didn’t require a lot of planning. It’s been a hit for potlucks since, btw. I’ve brought it to friends’ houses, my congregation, and had definitively made it for regular dinners. It’s become a comfort food of sorts, I guess.
Broccoli has always been a staple vegetable in my family. I don’t think anyone doesn’t like it. The only thing about this dish is the spice level. Some can’t handle the heat, and that’s okay! Just omit the red pepper seasoning and it’s still good! Bell peppers are sweet and the lemon garlic flavor really brings that out here.
Again, it’s something some people don’t like… I originally didn’t put bell pepper into my dish that I made for class (everything else I did). Since then, I have and there haven’t been complaints. Only empty plates. So, do with that information how you will!
This is a quick side dish that compliments many types of meals, especially steak or chicken based. Try incorporating it into your next dinner and see how it goes! You’d be surprised at how remarkable something simple appearing can be.
