
Double Chocolate Chip Cookies
Ingredients
- 2 1/4 cups of all-purpose flour
- 1 teaspoon of baking soda
- 1 teaspoon of baking powder
- 1 teaspoon of salt
- 1 stick of softened butter
- 1/2 cup of vegetable oil
- 3/4 cup of granulated sugar
- 3/4 cup of light brown sugar
- 1 teaspoon of vanilla extract
- 1 teaspoon of lemon juice
- 1/2 teaspoon of nutmeg
- 1/2 teaspoon of cinnamon
- 2 large eggs
- 2 cups of semi-sweet chocolate chips
- 2 cups of mini chocolate chips
Directions
- Preheat your oven to 350°F.
- Mix the granulated and light brown sugars, butter and oil, vanilla, lemon juice, and eggs into a large bowl. Whisk them until creamy.
- Combine flour, baking soda, baking powder, spices and salt in a separate bowl. Once mixed, slowly add dry mixture to your wet.
- Keep mixing until the dough becomes stiff. Now add in chocolate chips.
- Drop dough by rounded tablespoonfuls about 1 1/2 – 2 inches apart onto ungreased cookie sheet.
- Bake 8 to 10 minutes or until light brown (centers will be soft). Cool slightly, then remove from cookie sheet. Cool on wire rack for even hardening.
- Serve and enjoy! You can store the remainder in an air tight container.
There’s a saying in my mom’s home—
There is NEVER enough chocolate. When in doubt, add more chocolate! My mother has made “death by chocolate” cake a number of times in my life and each time I eat it, if there isn’t a glass of milk nearby, it would most certainly be my last meal. Not a terrible way to go, imo.
So with this recipe, I channeled my inner Rhee and got to work on perfecting a chewy cookie that’s chocolate to dough ratio was almost 3:1. It needed to be golden, it had to be fresh tasting even after two days (if it made it that long, and most importantly, it had to take cake (ya know, as much as a cookie could). After several trial runs, it was ready to perform.
My family is an honest bunch and I married a man who’s also honest to a fault. So if I need a true, non biased critique, I go to them. Because how else are you going to get told that something is dry and bland or underdone and salty? They’ll never let you forget it either. All iterations of each test will live with you until the day you die. Actually, until the last story of you is told because they’ll continue to rip into you even after your passing when the topic of food gets brought up.
So when my family’s eyes widen and the mmms started humming, I knew I hit the jackpot.
This cookie is chocolaty. It’s extra gooey. And that little bit of spice? *Mwuah* Perfection. I’m telling y’all, don’t sleep on this. It’s an easy step-by-step success plan that you can make prior to dinner and set aside to chill in the fridge. Then, bust that sucker out and surprise everybody with fresh, yummy smelling deliciousness that’ll have people going back for seconds and thirds.
I recommend a glass of milk. 👀 They kinda on the thicc side and stick to your mouth.
